Poblano Pepper Cilantro Sauce

I make a batch of poblano cilantro sauce every time they are in the basket. I used it to make vegan black bean and corn (from the basket) enchiladas. I have made an adaptation of this several times and it’s so tasty!


Roasted and skin-removed poblanos
Roasted onions
Handful of cilantro to taste
Lime juice (or lemon, or red wine vinegar)
Veggie broth to thin as needed
Salt and pepper

Blend until smooth, store in glass jars or freezer safe containers.
