Making the Most Of Your Market Haul
This is definitely not breaking news, but everything is expensive! ESPECIALLY if you’re trying to eat healthy. I’ll show you a few ways you can stretch your dollars while increasing your bang for your nutritional buck with your weekend famers market hauls.

Here’s three meals for breakfast in my current rotation/hyper fixations. Some are from TikTok, some are from me.
Maybe they’ll inspire you to try something new!
Breakfast:
Avocado Toast: (I usually have two)
½ avocado
1 slice of sourdough bread
1 egg
1 slice of tomato
Veggie Omelet, Sweet Potato and Avocado
3-4 eggs
¼ red pepper
4 mushrooms
¼ yellow onion
Handful of spinach
1 baked sweet potato
½ avocado
Yogurt Bowl
1 cup Greek yogurt
1 scoop vanilla whey protein powder
Peach
1 tsp peach honey
¼ cup granola
Lunch
Quick Snack Plate:
2 hard boiled eggs
1 sliced cucumber
1 sliced tomato
1 sliced carrot
Basil Salt
1 oz hard cheese
Red Pear
Protein of your choice (chicken, turkey, fish etc)
Cottage Cheese Bowl. This was a hyper fixation meal for me for many weeks.
1 cup low fat cottage cheese
½ can beans of choice
1 chopped cucumber
1 (or less) chopped red pepper
Chopped red onion
Tomatoes
Carrots
Avocado
Trader Joe’s Green Goddess seasoning
Sometimes I’d add chicken or tuna.
Dessert: Frozen banana bark with peanut butter greek yogurt and chocolate almond drizzle
Dill Pickle Chicken Salad Lettuce Wraps
1 cup chopped baked or grilled chicken
~1 cup fat free Greek Yogurt
Cucumber, chopped
Onion, Chopped
Pickles- I love any kind of garlicky refridgerated pickles. The TJ’s brand is so good. Use your heart here, I add at LEAST 4 chopped up spears.
Splash in some of that juice.
Dried (or be bougie and use fresh) Dill seasoning to taste.
Salt, pepper and a little garlic salt.
Use a leaf of green leaf lettuce like a taco shell and load it up.
Dinner.
Stir Fry Rice Bowls
1 cup cooked rice of choice. I like white rice, I know brown or wild is better…you do you boo boo.
Stir fry together in a little oil- broccoli, carrots, onions, zucchini, corn kernels cut off the cob, mushrooms.
Add in protein of choice. I love making this with thinly sliced steak.
You can add the cooked rice to the pan or pour the cooked stir fry over the rice.
Top it off with a little soyaki sauce from TJ’s and sesame seeds.
Pasta with Sausage and Peppers
Pasta of choice /Zoodles
I like to do a 50/50 mix of pasta to zoodles. I don’t cook the zoodles, when I drain the pasta I put the zoodles in the bottom of the strainer and the hot water does the work without making them mushy.
Package of vegan Italian Sausage (Of course regular is fine)
Red Peppers cut into strips
Onion, sliced
Tomato
Garlic
Parmasan Cheese
Cut sausage into slices and cook in a large pan until almost done, and peppers, onions and garlic. Cook until the peppers are soft and the onion are carmalized. Add tomato and mix until cooked but not mushy. Add to cooked pasta/zoodles.
Sunday dinner: A little throwback to Thanksgiving. Lots of sides!
Protein of your choice- I love basic baked chicken.
Mashed potatoes
Roasted okra
Lady peas, onions and yellow squash
Sliced tomatoes with basil salt
Potato Rolls (Black Moon Bakery)
Corn on the cob
