Sweet Potato Hash

Comfort food doesn’t have be unhealthy! This sweet potato hash will meet your macro and micronutrient goals while over delivering your taste goals!

The finished product! Loaded with fiber, protein and micronutrients.

I’ve always been a big fan of sweet and savory- bacon with maple syrup, butternut squash, apples and sage, etc and this sweet potato hash always hits the spot. When my boys were playing football at Pope High School, the booster club would provide a potluck breakfast for the teachers on their first day back to school. I made this several times and it was always the first dish to go! It uses the Vidalia onions, sweet potatoes and everyone’s nemesis, kale from your basket this week. The eggs and rosemary salt are add-ons every week.

This recipe is about 3 servings, 2 if you’re hungry and 1 if you’re committed or a teenager! With about 350 calories, 21 grams of protein and 5 grams of fiber per serving and loaded with vitamin A, K and C it will fuel you up for the day ahead.

INGREDIENTS:

4 sweet potatoes, baked and cut into thirds

1/2 Vidalia onion, chopped

2 large leaves of kale. Washed, water squeezed out and ribs removed. Tear into small pieces.

4 links of sausage, regular or vegan. Both work well. Chopped and Cooked.

1-2 tsp olive oil for sautéing the onions. You can also use butter if you prefer.

Salt, pepper, rosemary salt to your preference.

1/4 -1/2 tsp poultry seasoning to enhance the savory. Adjust to your liking.

Splash of veggie broth

3-4 eggs

Directions:

Cook sausage. Chop and set aside.

Heat oil in your pan, add onions. Cook until soft, about 5 minutes depending on the thickness of your onions.

Add rosemary salt

Add sweet potatoes. Mash them with your wooden spoon, spatula, etc.

Add poultry seasoning.

Mix the sweet potatoes and onions well, spread evenly in the pan. I like to let them get a little caramelized and crispy.

Once the potatoes are hot and crisy, add sausage and mix well.

Reduce hear, add kale. Add a few splashes of veggie broth. Mix well.

Cover and cook on low letting the kale steam until softer. About 3-5 minutes

Mix well. Add eggs over the top of the whole thing. You can scramble them in or leave on top and cover and let steam. Cook until yolks are to your liking.

Salt, pepper to taste. Serve immediately.
