Healthy Creamy Black Bean Salad
I frequently lament the social media algorithm, but sometimes it works out ok. Of all the trends social media has shown me against my will (why are people posting themselves crying?) I was dropped off in something I could get down with-BEANS! Bean-maxxing, Bean Tok, Bean-stagram, whatever it’s called I’m HERE for anything involving the magical fruit. Protein, fiber, inexpensive, diverse…what’s not to love? I’ve been adding beans, between a 1/2 cup to a whole can to at least one of my meals and I feel great! My go-to is a cottage cheese base, ½ can of beans and a whole lotta fresh chopped vegetables. I’ve been trying to be better about posting the easy meals I eat using our produce but cottage cheese isn’t the most photogenic of all the foods out there. You’ll have to trust me, it’s a quick and easy meal!
We’re in the thick of the dog days of summer here in metro Atlanta, and standing in front of the stove or worse, turning on my oven is low on my list of things I want to do. I was making one of our staples- chicken fajitas and rice and Elote when I realized I missed my daily dose of beans for lunch. Keeping with the dinner theme I whipped up a quick black bean salad that’s absolutely going in the rotation.
This is high in volume and very nutritionally dense.
Makes 5 servings

Carbohydrates: 26 grams
Fiber: 6 grams
Protein: 9 grams
Fat 1.2 gram
Ingredients:
2-3 ears of corn, kernels cut off (or 1 can, drained)
1 can black beans, drained
½ medium red onion, diced
4 oz can diced green chilis, drained
1/2-1 cup non-fat plain Greek yogurt
Salt & pepper to taste
Taco seasoning to taste. (or TJ’s everything but the elote seasoning is FABULOUS too!)
Instructions:
In a large bowl, larger than you think, mix together all ingredients well and refrigerate for at least 2 hours before serving.
Serve with chips, cucumber chips or eat with a spoon like I did!
You can adjust this anyway you like- add tomatoes, chicken, more cucumbers, onions, jalapeno, canned corn. Enjoy and welcome to the wonderful world of BEANS!
